BAKED GRANOLA BARS
SUPER SIMPLE
I developed this recipe for a client who was looking for a nutritious sweeter snack option and I loved them so much I wanted to share the recipe with you all. Super simple to make and feel free to substitute the nuts, seeds and dried fruit for alternative varieties if you prefer.
INGREDIENTS:
100g oats
60g almonds/alternative nut or seed, roughly chopped (or alternative nut/sunflower/pumpkin seeds)
30g ground flaxseed
40g sunflower seeds
40g ground almonds
80g chopped dates/alternative dried fruit
30g coconut oil
80g maple syrup
2 tablespoons nut butter
Optional: dark chocolate for topping
METHOD:
- Preheat the oven to 160°c 
- Add all the ingredients apart from the coconut oil, maple syrup and almond butter into a bowl and stir until evenly mixed. 
- Add the almond butter, coconut oil and maple syrup into a small saucepan and gently melt. 
- Remove from the heat and pour into the oat mixture, stirring until all the dry ingredients are coated. 
- Place into a lined baking tray and bake for 25-30 minutes until the edges are golden brown. 
- Remove from the oven and leave to cool completely.
